The true home of Wagyu beef is Japan. However, due to the increasing demand and the high commercial value for Wagyu halal beef, there are other foreign countries that farm and sell wagyu beef.
The QR Code enables meat handlers, restaurants, supermarkets and end consumers to know accurately with detailed information on the traceability of the meat and to have the assurance of its origins and authenticity.
At the Wagyu Seminar and Tasting Session held for restaurateurs, hoteliers, retailers, chefs and media in Kuala Lumpur recently, the Japan Livestock Products Export Promotion Council shared the process of the QR code technology system followed by Wagyu beef cutting, cooking demo and tasting session.
“There is illegal use of Wagyu logo and the term Wagyu is also used loosely. This leads to misconception in the market and variations in the quality and taste of the meat. To ensure the industry and consumers receive authentic Japanese Wagyu halal beef, we are introducing the QR Code technology. By scanning the code, you can access all the necessary important information such as the breed, prefecture of farm, date of birth, date of slaughter and more,” said Mr Hishinuma Tsuyoshi, Director, Japan Livestock Products Export Promotion Council.
Japan began exporting halal Wagyu to Malaysia in 2017 and the premium meat is now available in many restaurants, hotels and supermarkets. On a global scale, wagyu beef has seen a 400% increase in exports over the last five years and the Japan Livestock Products
Export Promotion Council expects a steady growth in demand as more restaurants become aware of the superior quality and taste of Japanese Wagyu beef.
To check for authenticity, customers can look out for the official logo which is an outline of a cow’s head against the backdrop of the Japan flag, with the words “Beef JAPAN” and the QR code, which will be introduced in stages.
“The quality of Japanese Wagyu beef is unique due to the care and nurturing using special techniques and technology. The farmers are very precise in their methods and take extreme care of the livestock,” added Mr. Hishinuma Tsuyoshi.
Japanese Wagyu beef is famed for its texture, flavor and aroma. The “Wagyu beef aroma” is rich and sweet akin to peaches and coconuts. The retronasal aroma and flavor spreads when chewing the meat. The marbling texture adds to the deliciousness of the meat.
Rather than being greasy, the high quality of fat has a melt in your mouth effect which makes for a juicy and delicious treat.
